Yes.
You can specify the exact density as an arg to the format command.
Format will format an already formatted floppy to the same density as it was to start with, by default. As a lot of floppies are pre-formatted these days, you might need to use the argument.

I have a 2.88 Mb drive on my 760CD, but don't know how to use it <s>. Do these drives format regular 1.44 disks to 2.88?
