This sounds like a hardware problem since it happens randomly and not in response to a specific action sequence or set of running software (although it could be a driver). I have seen this same thing happen to my ThinkPad 770 before. In that case it turned out to be a RAM problem. When I was running Win98 and was not plugged into AC, the system would lock up as you describe after a random amount of use (30 sec to 10 min.). Removing the offending RAM stick caused the problem to go away. Note that the same 770 had NO problems running Win98 while plugged in, and it had NO problems running WinNT4 whether plugged in or not. So I guess you could say that it was a software/OS problem that was caused by a certain set of hardware.
Try removing all memory so that you're just using the on-board memory. See if the problem goes away. Also, try to see whether the problem happens more or less frequently when you are running unplugged.
Good luck,
Rob
